I love fishing at Borroloola. We had a great time at the caravan park. 
Here is my Barramundi Thai Fish Curry:
A slab of Barra, diced and marinated with a splash of brown vinegar, lemon juice & soy sauce. Add some ground ginger, coriander, cumin, chilli & chopped garlic.
Cook in an iron pot with olive oil and serve on a bed of steamed white rice.

Thanks Annita and Jeff for looking after us while we were there for a couple of weeks fishing. You both as well as Kendall and Julie were great hosts and were only too happy to help us with our needs.

Again thanks so much for your great accommodation and fishing tips. They were greatly appreciated and we have passed on to our many fishermen friends how well we were looked after at the McArthurr River Caravan Park.

Annita's Thai Curry Fish Recipe

I was playing around to find a way to cook fish a bit differently. I am not really a recipe follower and prefer to make my own. So give this a try...

Cook some onion, garlic and ginger in a small amount of oil. Add pkt of stir fry vegies (I find the frozen packets easy being out here)

Place in a thai green curry sachet or bottle. Add coconut milk and coconut cream.

When this is simmering, add fresh diced uncooked fish. Cook in the sauce.

Serve with rice.
